Ingredients

2 cups cooked regular pearl barley

1/2 cup raisins or chopped dates

1/4 cup slivered almonds

1 tablespoon fresh lemon juice

1 teaspoon grated lemon peel

1/2 cup honey

1/2 teaspoon vanilla

2 eggs

2 1/2 cups milk

1/4 teaspoon salt

Preparation

Place cooked barley, raisins, almonds, lemon juice and peel in 2 quart baking dish. mix together rest of ingredients and pour over barley. Stir to mix well. Bake at 350 degrees for 30 minutes or until set.
