Ingredients

2 cups water or broth

1 cup lentils

1 small onion, diced

1 cup quick oats

3/4 cup grated cheese

1 egg, beaten

about a cup of spaghetti or tomato sauce

generous dallop of pesto or various herbs

salt and pepper

Preparation

  1. Add lentils to boiling water. Simmer for 25-30 minutes.
  2. Allow lentils to cool; mash them up a bit 3.) Mix all ingredients well. Spoon into 12 muffin cups. 4.) Bake at 350 degrees for 30-45 minutes, until top of loaves are dry and firm. 5.) Cool. Enjoy
