Ingredients

2 medium ripe tomatoes, diced (about 3/4 pound)

1/2 c diced red onion (soak in ice cold water for 20 minutes and then squeeze out water – softens the taste)

1 tsp minced seeded serrano chile (optional)

1 T minced fresh garlic

3 T chopped fresh cilantro or parsley leaves

Few drops lime or lemon juice

Salt and pepper

Preparation

Comine all the ingredients in a mixing bowl and set aside for at least 30 minutes. Test before serving and add more seasonings if necessary.

Store in fridge but bring to room temperature before serving. Best same day.
