Ingredients
3 eggs
3/4 cup milk mixed with 1/4 cup water
3/4 cup flour mixed with a dash of salt
3 TBL.Basil puree (or you can use pesto)
butter for frying
Preparation
Combine eggs and milk. Add flour until smooth (I use a blender) Using an 8 inch fry pan, pour in 1/3 cup of the batter and swirl to cover the bottom of the pan.Cook until the crepe is golden brown on one side, then flip and cook briefly on the other side. Cool the crepes on a clean towel, then fill.
