Ingredients
1 pkg of frozen spinach (thawed and drained well to remove excess moisture)
1/4 cup olive oil
1 cup grated parmesan cheese
8 oz cream cheese
4 oz soft goat cheese
1/4 cup finely chopped walnuts
1/4 thinly sliced sun-dried tomatoes
3 or so fresh garlic cloves and/or garlic salt (I use fresh crushed garlic only)
1 cup fresh basil (you can use dried basil- a 1/2 cup or so)
Pepper to taste.
Preparation
- Line a medium sized bowl with plastic wrap leaving a 4-inch overhang.
- In food processor or blender combine spinach, olive oil, basil, garlic and parmesan cheese. Blend until almost smooth. 3)In a separate bowl mix the cream cheese and goat cheese until blended and smooth. (Mixing with fork will suffice.)
- In the bowl lined with plastic wrap, layer, in thirds, the cheese mixture and spinach. Top with walnuts and sun-dried tomatoes. Repeat for additional layers. When you have used all of your ingredients, fold the edge of the plastic wrap over the cheese ball. Mold into a mound. Refrigerate for at least an hour or two before serving.
