Ingredients
2 c. fresh basil leaves, packed
1/2 c. freshly grated Parmesan cheese
1/2 c. extra virgin olive oil
1/3 c. pine nuts or walnuts
3 medium sized garlic cloves, minced
salt and pepper to taste
Preparation
Combine the basil leaves in with the nuts in a food processor. Pulse a few times to blend. (If using walnuts, pulse them first before adding basil.)
Add the garlic and pulse a few more times.
Slowly add the olive oil in a steady stream with the processor is running. Stop and scrape down sides as necessary.
Add the grated cheese and pulse until blended. Add salt and pepper to taste.
