Ingredients
1 1/2 pounds broccoli, trimmed
1 cup chopped onions
1 cup leeks, sliced
1 large potato
4 tbls. butter
1/2 cup basil leaves
3-5 tbls. milk
grated parmesan cheese`
Preparation
Steam broccoli till just tender. Boil potato till soft. In a large skillet, melt butter, add onions and leeks and saute till soft. Add broccoli to pan for a few more minutes. Put broccoli mixture in a food processor and puree till just blended. Add potato and basil and continue to puree slowly adding milk till smooth. Serve warm with cheese sprinkled on top.
