Ingredients

1/2 c. mayonnaise

2 T. lemon juice

1 T. Dijon mustard

1/2 t. lemon pepper-seasoning

1/4 t. hot sauce

3 c. chopped cooked chicken

1/2 c. chopped celery

1/4 c. shredded fresh basil

2 green onions, chopped

6 c. torn or shredded fresh spinach

2 T. pine nuts or pecan pieces, toasted

Preparation

Combine first 5 ingredients, stirring well. Add chicken and next 3 ingredients, and toss gently. Place spinach on individual serving plates; top with chicken mixture. Sprinkle with nuts.
