Ingredients
2 cooked, chilled chicken breasts chopped into 1/2 inch cubes
1 celery stalk, chopped
2 tea. finely chopped green onion
1/2 c. chopped toasted walnuts
1/2 c. mayonnaise
2 TB plain yogurt
2 TB chopped fresh basil
Salt and Pepper to taste
4 boston lettuce leaves
1 tomato cut into 6 wedges
Preparation
Combine chicken, celery, green onion, walnuts, mayonnaise and yogurt. Sprinkle with salt and pepper to taste and fold in 3/4 of the basil. Mound chicken salad onto 2 plated beds of lettuce and garnish with tomato wedges and more fresh basil.
