Ingredients

1/2 cup walnuts

2 cloves garlic

salt and freshly milled pepper

scant 1/2 cup olive oil

3 tbs red wine vinegar or 2 tbs sherry vinegar

1 tbs chopped basil or 1 tsp dried

Preparation

Using small food processor or mortar and pestle, grind or pound the walnuts, garlic, and 1/2 tsp salt to a chunky paste. Gradually whisk in the oil, then add the vinegar. Stir in the basil and season with pepper. If the dressing thickens too much before serving, thin it with water to a lighter consistency.
