Ingredients

zucchini flower (male flower: the one that is not connected to a zucchini)

65 gr of flour

beer (larger) (1 dl)

bit of salt

1 egg white

1 little spoon of extra virgin olive oil

more oil for frying

Preparation

wash the flowers and dry them (there shouldn’t be any water left on them)

prepare the batter:

  • mix the oil in the flour

  • mix the pinch of salt in the flour

  • pour the larger in

  • mix everything together

  • cover with a cloth for rest for 30 minutes

  • whisk the egg white with a pinch of salt ’till stiff

  • fold it gently in the batter with a spoon

  • warm up the oil

  • dip the flowers in the batter for few seconds

  • remove the excess batter and put them in the pan to fry..

don’t let them burn and enjoy them ;)
