Ingredients
Curry dressing:
3 Tb soy sauce
1 Tb balsamic vinegar
1/2 c olive oil
1 tsp curry powder
2 Tb honey
1 Tb water
Salad:
1/2 c Israeli couscou
1/2 c golder raisins
1 can chickpeas, drained and rinsed
1 cuke, cubed
1/3 c mint, chopped
2 Tb sliced almonds, toasted
Preparation
Combine dressing ingreds in blender and reserve
Prepare couscous according to directions on box.
Soak raisins in warm water for 10 minutes, then drain.
Combine salad ingreds with dressing to taste and toss. Reserve remaining dressing,
