Ingredients

3 lb. beef brisket

vegetable oil

1 onion, thinly sliced

1 cup ketchup

1/4 cup worcestershire sauce

2 tbs. brown sugar

2 tbs. cider vinegar

2 tsp. kosher salt

2 cups shredded sharp cheddar

8 hearty rolls

Preparation

In 1 tbs. oil, brown beef on both sides. Add onion and cook until they are golden. Combine the next 5 ingredients and pour over meat. In a dutch oven or heavy pan, simmer the meat, covered until tender, about 3 hours. Cool. Slice the meat against the grain. Wrap the meat separately from the sauce. To serve, heat the sauce in a small saucepan. Warm the beef on the grill in aluminum foil. Slice rolls and lightly toast on the grill, inside down. Cover with meat and 1/4 cup cheese. Heat until cheese melts.
