Ingredients

THE SAUCE

2 cups ketchup

1/2 cup cider vinegar

1 tbsp chipotle powder

1/4 cup molasses

1 tsp Tabasco sauce

1 tsp Worcestershire sauce

2 tsp garlic, finely chopped

2 tbsp brown sugar

1/2 tsp ground cumin

1 oz bourbon

THE RUB

2 tbsp Montreal Steak seasoning

1 tsp ground cumin

1 tsp kosher salt

1 tbsp freshly ground pepper

1 tbsp granulated garlic

1 tbsp onion powder

2 tbsp sweet paprika

2 tsp chile powder

1 tsp each fresh thyme and rosemary

Preparation

Brush or rub meat with sauce, then roll in rub mixture. Wrap in plastic and refrigerate overnight. Pre-heat grill to 200 F. Place meat on grill and cook slowly, turning every 15 minutes. Cook to internal temperature of 145 F.
