Ingredients
1 can (15 oz.) black beans
1 can (7 oz.) white shoepeg corn
2 avocados, peeled and chopped
2 tomatoes, diced
red onion, diced (to taste)
salt, pepper, cilantro (to taste)
1/4 cup red wine vinegar
1 bag Tostitos, “Hint of Lime”, tortilla chips
Preparation
Drain black beans and corn. Chop avocados, tomatoes, red onion and place in bowl. Add drained corn, beans, salt, pepper, cilantro and red wine vinegar and mix. Adjust seasonings. Serve with tortilla chips.
