Ingredients

1 medium chopped onion

1 clove of garlic, finely chopped

2 tbsp olive oil

2 cans (16 oz) chicken broth

2 cans (16 oz) diced tomatoes with juice

2 cans (16 oz) white beans with liquid

1 tbsp. dried thyme

1 bag pre-washed baby spinach

shredded parmesan

salt and pepper to taste

Preparation

Saute the garlic and onion in olive oil in a soup pot until soft. Pour in the broth, tomatoes, and beans. Stir in the thyme, salt and pepper. Bring to a boil. Let simmer, uncovered for 5 minutes. Add spinach and increase heat. Cook until spinach softens. Serve soup topped with parmesan cheese.
