Ingredients

3.5 to 4 lbs beef sirloin or stew meat, and or pork cubes

Salt

Black pepper

Red Pepper

1 tbs Olive oil

1 large vidalia onion chopped

1 green, 1 red pepper chopped

2 medium jalapeno peppers

chopped garlic (optional)

1 can Lager (optional)

4 cups beef broth

28 oz crushed/whole tomatoes

2 bay leaves (optional)

1 cinnamon stick (2.5 to 3")

2+ tbs ground ancho chile

(sub in chili powder)

2 tsp ground cumin

1.5 tbs brown sugar

Preparation

Saute the onions, peppers, and garlic in oil … remove. Brown meat, add spices, salt & pepper. With the meat good and brown, add in the beer and cook on high for ~ 10 minutes. Toss in pepper mix. Add tomatoes, broth and other ingredients. Simmer for ~ 2 hours.
