Ingredients

1 cup brown rice

15 oz. can red or pinto beans, drained &

rinsed

1 cup shredded lettuce

1 cup chopped tomato

1 green bell pepper, chopped

1 onion, chopped

1/4 cup chopped cilantro

3/4 cup salsa

Preparation

Cook brown rice. Cook 1/2 veggies in a bowl in microwave for 3 min. on high. Cook other 1/2. Mix.
