Ingredients

juice of 2 lemons

3 large apples, medium dice (1 tart, 2 sweet)

1/2 c mayo

1/4 c sour cream

2 oz rasins

1 oz red onion, minced

3 oz walnuts, chopped

2 ribs celery, fine dice

salt and pepper

Preparation

  1. Place the lemon juice in a large bowl. As soon as the apples are chopped, place them in the juice and toss to coat. This will not only give the apples a great flavor kick, it will prevent browning. Pour off the lemon juice, reserving 1 T.

  2. In a small bowl combine the mayo, sour cream, reserved lemon juice.

  3. Place raisins, onion, walnuts, and celery into the bowl with the apples. Season with a pinch of salt and pepper.

  4. Pour in the dressing and fold with a rubber spatula until all ingredients are coated.

  5. Serve over romaine lettuce.
