Ingredients

8 manicotti noodles

5 cloves of garlic crushed

chopped green onion

2 tablespoons olive oil

1 cup dry sherry

2 cups whipping cream

salt and pepper

1 onion chopped

1 cup fresh mushrooms

1 zucchini chopped

1 cup red pepper chopped

1 teaspoon basil

1 teaspoon oregano

3/4 cup ricotta cheese

1 cup parmesan cheese

Preparation

Parboil noodles. In sauce pan saute garlic and green onion in olive oil. Cook for 30 seconds. Add sherry and raise heat. Cook until liquid is reduced. Stir in cream, reduce liquid to 1 1/2 cups, set aside. Put olive oil in pan and cook veggies until tender. Transfer to bowl stir in spices and cheese. Preheat oven to 350, grease dish and stuff noodles. Place Manicotti in dish and cover with cream mixture. Bake for 25 minutes.
