Ingredients
4 ounces unsweetened chocolate, melted
6 1/2 ounces vegan margarine
1 1/2 cups packed light brown sugar (white sugar ok too)
2 medium well ripened bananas, mashed
1 teaspoon vanilla extract
3/4 cup all purpose flour
1 cup chopped walnuts
Preparation
- Preheat oven to 350°F. Spray a 9x9-inch baking pan and set aside.
- Cream the margarine and sugar in the bowl of a mixer fitted with a paddle attachment until light and fluffy.
- Add the mashed banana and vanilla extract, beating well to combine.
- While the mixer is still running, slowly drizzle in the melted chocolate and mix well. Scrape the sides of the bowl down to make sure all ingredients are thouroughly combined.
- Add the flour and nuts and mix just until combined.
- Pour into the prepared pan and bake at 350°F until center is completely baked and is not shiny, about 25-30 minutes. The brownies will still be really fudgy when baked all the way, so be careful not to overbake them!
