Ingredients

marinade:

1 tbsp soy sauce

1 tbsp peanut oil

1 tbsp sherry

1 tsp brown sugar

1 tsp corn starch

stir fry:

1/2 pound flank steak

1 pound bok choy

2 tbsp peanut oil

1 tbsp ginger root, minced

Preparation

mix together all marinade ingredients. cut the beef in thin diagonal slices across the grain. add beef to marinade. separate leaves from stems of the bok choy. cut the stems into 2 inch pieces. in a wok or skillet, heat 1 tbsp of the peanut oil until very hot. add the ginger root & toss for a few seconds until light brown. add beef, stir, & set aside. add remaining oil. stir in the bok choy stems, cover, & cook for 30 seconds. remove cover & stir until slightly soft, then add the bok choy leaves & beef. heat for 1 to 2 minutes thoroughly. if necessary, a little chicken stock may be added so the bok choy is lightly glazed. serve.
