Ingredients

1(5-6pound) trimmed beef brisket

salt and pepper to taste

1 oninon finely chopped

1tsp ground ginger

1tbs minced garlic

1/4 cup of creole mustard

1 cup diet cola

1/2 cup ketchup

1/4 cup soy sauce

1/4 cup of honey

Preparation

Trim any fat from brisket. Season both sides with salt and pepper. In a small bowl, mix together the onion,ginger,garlic,mustard,dietcola,ketchup,soy sauce,and honey. Spread over brisket,cover and refrigerate over night. preheat oven to 325 degrees. place the brisket and marinade in a dutch oven. Bake covered for 5 to 6 hours or until tender. Slice against the grain and serve.
