Ingredients
Sauce:
1 cup Mayonnaise
3/4 jar roasted red peppers
1/2 cup creamy gorgonzola cheese
1/4 cup chopped shallots
Beef:
1# deli beef
1/4 olive oil
2 TBS minced parsley
1 TBS minced thyme
T TBS minced rosemary
1/4 tsp red pepper flakes
1 baguette
1 clove garlic chopped and 1/3 cup of olive oil
2 cups spinich or arugla
Preparation
Sauce: Put mayo, roasted peppers, Gorgonzola and chopped shallots in a processor and puree
Marinate: Combine olive oil and herbs then toss with rough chopped beef and allow to marinate 1 - 3 hours
Slice Baguette on the diagonal. Brush with olive oil and garlic mixture and toast in 350 deg. oven for 10 minutes or until lightly toasted
Assembly: Place arugla leaf or spinanch leaf on baguette. Top TBS of chopped beef on leaf then top with tsp of mayonaise mixture.
Cover and refrigerate. Can be made 2 hours ahead.
