Ingredients

1/2 cup canned beets, drained and minced

2 to 4 tablespoons horseradish

8 slices crusty ciabatta bread or 4 crusty rolls

8 ounces lean, sliced beef

1/2 cup sliced red onion

1 can (4 ounces) sliced mushrooms, drained*

2 cups shredded leaf lettuce

*If desired, sauté in a tablespoon of olive oil or butter in a non-stick pan before adding to sandwich.

Preparation

In a small bowl combine beets and horseradish to make spread; blend well. To assemble sandwich, spread beet-horseradish mixture on one side of 4 slices of bread. Arrange beef, onion, mushrooms and lettuce on top. Top with remaining slices of bread.
