Ingredients
1 lb beef steak such as sirloin or flank
1/4 tsp salt
1/4 tsp pepper
3 T. fresh lime juice
1 T. brown sugar
1T. Soy sauce
1 small jalapeno pepper minced
2 C. lettuce with large leaves for wrapping such as bibb lettuce
1 C. red onion, thinly sliced
1/2 C. english cucumber, matchstick cut
1/2 C. fresh cilantro, torn
1/2 C. shredded carrots
Preparation
Heat a saute’ pan over medium high heat. Coat pan with cooking spray. Sprinkle steak with salt and pepper. Place steak in pan; cook 5 min on each side. Remove from pan; let stand 10 min. Cut steak diagonally across the grain in to thin slices.
Combine juice, soy sauce, sugar minced jalapeno in medium bowl, stirring with a whisk. Reserve 4 teaspoons juice mixture in small serving bowl. Pour remaining juice into a large bowl; add steak, tossing to coat.
Combine cucumber, cilantro, carrot.
Place 1 1/2 ounces beef in center of each lettuce leaf; top each with 1/4 C vegetable mix.
Roll up and serve with reserved juice mixture.
