Ingredients
1/2 lb prime rib, sliced in to 0.5 in thickness strips
2 chinese eggplant, sliced in to 0.5 in thickness strips
1 pepper, sliced
4-5 scallions, cut into 1.5 in thickness
1-2 garlic cloves, minced
red chili flakes
salt & pepper
Preparation
boil eggplant in salted water for 1 min, drain and set aside
quickly cook meat and set aside
fry eggplant, peppers and garlic until the eggplant and peppers are done
add the scallions and stir for another min.
add the beef, season with salt and pepper and chili flakes
