Ingredients
1 1/2 Kilogram piece, corner of topside.
Olive oil.
Salt and pepper.
Salad:
2 handfuls of baby rocket .
6 ripe pears, cored and sliced thickly.
1 small radicchio lettuce.
1-2 large balls of fresh mozzarella, drained.
8 strips of pancetta or streaky bacon, cooked until crisp.
Dressing:
1/2 cup packed basil.
1 tablespoon capers.
1 teaspoon Dijon mustard.
Finely grated zest of one lemon.
2 tablespoons of lemon juice.
1 clove of garlic, crushed.
1/2 cup olive oil.
1/2 cup freshly coarsely grated parmesan cheese.
Preparation
Preheat oven to 220c Rub the beef with a little olive oil. SEason generously. Place on a rack set over a baking dish. Roast 40 mins. Do not baste meat. Transfer to a plate, loosely cover, and cool.
Dressing: Put basil, capers, mustard, lemon zest, and lemon juice, and the garlic in a food processor. Pulse to combine. With motor running drizzle in the oil and add the cheese. Process again. Season.
To Assemble: Thinly slice the beef, with sharp knife. Arrange all ingredients on a large platter and drizzle with the basil dressing.
