2.5 lb Beef Shoulder
1 tbsb Ground Clove
2 slices Orange Peel
2 Bay Leaves
1 bottle Burgundy
Beef Stock
Pearl Onion
Carrots
Mushrooms
Red Potatoes
Chives for garnish
Serve w/ Peasant Garlic Bread
Preparation
Cut beef in 1.5 inch cubes. Dredge in flour. Sear off in butter/olive oil. Remove. Deglaze with wine. Add stock, clove, bay, orange, garlic Return beef. Simmer 2 hours. Add veggies, cook another 30 min. Garnish with chives.
