Ingredients

1/2 lb. STEWING BEEF, cut into 1 inch squares

2 tsp. SALT

1 med. ONION, chopped

1 BAY LEAF (optional)

1 cup CELERY AND LEAVES, chopped

1/4 - 1/2 tsp. PEPPER

1/2 cup RICE, uncooked

1 med. POTATO, diced

3 CARROTS, diced

2 cups canned TOMATOES

WATER

Preparation

Put stewing beef in a pot. Add salt, onion, bay leaf, celery, and pepper. Add enough water to cover by about 1 inch.

Simmer 2 - 3 hours adding water as needed.

Add rice, potato, and carrots. Add water if needed. Cook 45 minutes.

Add canned tomatoes and enough water to make 1 gallon of soup.

Cook 15 more minutes and serve.

Yield: 8 - 10 servings
