Ingredients

1 1/2 lbs beef

S&P

3T butter, divided

2T flour

2C beef consomme

2t Dijon mustard

1/4C sour cream

1T EVOO

1/2 small onion

1 lb extra wide egg noodles

Preparation

Slice meat and season with S&P Heat a skillet over medium heat. Melt 2T butter and cook with flour 1 min. Whisk in consomme and thicken 1 min. Stir in mustard and sour cream, thicken 2-3 min. Remove from heat and season with S&P. Heat a second skillet over high heat. Add 1T oil and 1T butter. Add meat and onions and cook 3-4 min. Combine with sauce.
