Ingredients

one 4-5 lb beef tenderloin

1-2 T salt

1-2 T Coarse black pepper

Preparation

preheat oven to 200-225*

season trimmed and tied beef tenderloin liberally with salt and pepper and and let sit at room temperature for 1 hr. Bake until internal temperature is 125* for rare or 130-135* for Medium.

Before serving, brown tenderloin in butter/ oil in a large skillet over med high heat until a desired crust forms. Slice into 1/2" slices and garnish with sea salt
