Ingredients
3 pounds stewing beef
1 tablespoon brown sugar
1 tablespoon vinegar
1 1/2 beef broth or water
8 slices bacon, cut in 1-inch pieces
5 large onions, cut in eighths
5 - 6 cloves garlic, coarsely chopped
2 teaspoons dry parsley
leaves from 2 stalks of celery, chopped
1 teaspoon thyme
8 peppercorns (you can put them in a muslin bag, or dump them in the pot and take your chances!)
1 bottle beer (any type at all)
Preparation
Preheat oven to 275F.
Brown meat in frying pan.
Mix sugar and vinegar into the broth (or water).
Put all ingredients except the beer, and including the drippings from the frying pan, into a 6-quart casserole dish (or slow cooker).
Pour beer over top. Pour it slowly, so it doesn’t froth up over the sides. Stir gently.
Cover and cook at 275F for at least four hours, or, for the crockpot, on low for 6 - 8 hours.
