Ingredients
1 cup oil
1/2 cup margarine, melted
3 eggs
2 cups sugar
2 1/2 cups flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 cup drained crushed pineapple
1 cup diced beets (undrained)
1/2 cup cottage cheese
1 cup chopped walnuts
1 cup coconut
2 tsp. vanilla
Preparation
Melt together oil and margarine. beat eggs and sugar; add oil mixture and beat well. Add flour, cinnamon, baking soda, baking powder and salt. Fold in pineapple, beets, cottage cheese, walnuts, coconut, and vanilla. Bake in greased and floured 9 X 14 pan at 350 degrees for 45 - 50 minutes, or until cake tests done with toothpick. Frost with cream cheese frosting.
