Ingredients

3 medium beets

goat cheese

1 avacado

half of a red onion

optional:

fennel

wheat berries

oranges

Preparation

  1. boil the beets for 30 minutes (or roast the beets)
  2. when they are slightly cool, peel and chop the beets
  3. cut up the avacado and red onion
  4. combine and sprinkle with goat cheese
