Ingredients
6 beets, roasted and cut into large chunks
1/4 cup walnuts, toasted and chopped
1 1/2 tablespoons good olive oil
3/4 tablespoon red wine vinegar
salt and pepper
4 ounces goat cheese torn into bite-sized pieces
Preparation
Stir together beets, walnuts, oil, vinegar and salt and pepper. Just before serving, add goat cheese.
