Ingredients

8-10 Medium beets, red, golden, or a combo

3 tablespoons walnut oil

3 tablespoons balsamic vinegar

Sea salt or Kosher salt and freshly ground pepper

4 ounces soft goat cheese

2 tablespoons chopped fresh oregano

1/2 cup chopped lightly toasted pecans

Preparation

  1. Clean the beets and steam until you can pierce with with a fork. Cook and slip off skins. Cut into 3/4 inch cubes.
  2. Transfer to bowl and drizzle with walnut oil and vinegar.
  3. Top with goat cheese chuncks, oregano and pecans. Salt and pepper to taste.
