Ingredients
1 tablespoon of butter
1 large onion
2 1/4 cups beef broth
4 large red beets
1 medium can whole or stewed tomatoes
salt and pepper to taste
sour cream to serve
Preparation
- In a large pot melt butter and stir onion for a few minutes, until onion is slightly soft
- Add the beef broth, beets and bring to a boil
- reduce to a medium-low heat and add tomatoes and salt & pepper and cook for 25 to 30 minutes
- Remove all the vegetables from the broth and put them in a blender, blend until smooth and return to broth
- Stir the mixture to blend the vegetable puree and the broth together
- serve with a dollop of sour cream
