Ingredients

3 lbs fresh beets ( 3 bunches )

2 tbsp raspberry vinegar ( I used half raspberry and half balsamic/raspberry as I didn’ t have enough just raspberry)

2 tbsp fresh squeezed orange juice ( I used not fresh squeezed but not from concentrate )

3 tbsp good olive oil

½ tsp sugar

1 ½ tsp kosher salt

½ tsp pepper

1 small red onion

Zest of 2 oranges

Segments of 2 navel oranges.

Preparation

Cook and then dice beets. When still warm add the rest and then let sit. Best if made a few days ahead so the vinaigrette soaks into the beets.
