Ingredients
1/2 C. tahini (sesame seed paste)
3 cloves garlic, crushed
1/2 tsp salt
2 Tbsp olive oil
1/4 C. fresh lemon juice
1 tsp parsley, finely chopped (optional)
Preparation
Squeeze garlic through a press and with the flat side of a knife, mash into a paste with the salt. Add garlic mash into the tahini and stir. Now add olive oil and lemon juice and stir.
This mixture will thicken as you stir it, so add warm water (one teaspoon at a time) until you reach the desired consistency. Add parsley & stir. Refrigerate for up to 2 weeks.
Serve over warm falafels.
