Ingredients
1/4 c white wine
1/4 c wine vinegar
2 tb shallots
2 tbsp tarragon
Black pepper
3 egg yolks
3/4 c melted butter
Preparation
Combine wine, vinegar, shallots, tarragon, pepper, and cook until reduced to 2 tbsp. Add to egg yolks in blender. Blend. Add 1 tsp salt. With the blender running, add hot melted butter. Add additional tarragon.
