Ingredients
1 3/4 Cups bran flake cereal
1 Cup lowfat buttermilk
1 egg beaten
3 TBSP vegetable oil
1 cup all-purpose flour
1/3 cup packed brown sugar
1 TBSP baking powder
1 tsp ground cinnamon
1 cup frozen or canned blueberries, drained
Topping:
3/4 C bran flake cereal, crushed to 1/3 cup
3 TBSP packed brown sugar
1 TBSP butter or margarine, melted
Preparation
Preheat oven to 400F. Grease or paper line 12 muffin cups. Combine cereal, buttermilk, egg and oil in large mixing bowl. Let stand 5 min; stir to break up cereal. Combine flour, brown sugar, baking powder and cinnamon in small mixing bowl. Add to cereal mixture and stir until combined. Fold in blueberries. Devide among muffin cups. Sprinkle with topping. Bake 20 - 25 minutes or until tester inserted in muffin center comes out clean.
