Ingredients
2 40 oz. cans cut sweet potatoes in syrup
2 t fresh lemon juice
3 T butter, melted
1 egg
1/4 c heavy cream
2 t finely grated fresh orange zest
1/2 t freshly grated nutmeg
1/4 t ground cinnamon
1/4 t ground ginger
1/4 t salt, or to taste
1/4 t black pepper, or to taste
Preparation
Preheat oven to 350 degrees.
Combine all ingredients until well mixed. Blend well until creamy (about an extra 2 minutes).
Place in buttered, 9"x13" glass casserole dish. Level with a spatula. Bake in center of over for 355 minutes.
Add marshmallows in a single layer and bake for 10 more minutes or until golden brown.
Let cool. Serve.
