Ingredients

•1 ¾ cup flour (recommended combo: ¾ cup Bob’s Red Mill All Purpose GF Flour, ½ cup Almond Flour (Almond Meal), ½ cup Aramanth Flour)

•2 tsp Baking powder

•¼ tsp baking soda

•2/3 cup sugar

•1/3 cup butter (room temperature)

•2 eggs

•½ cup coarsely chopped nuts (Walnuts)

•3 ripe bananas

•1 ½ tsp Xanthan Gum (for GF bread only)

Preparation

1.Preheat Oven to 350 °F 2.Combine Dry ingredients into a moderately sized bowl ( Flour, Soda, baking Powder, sugar, Xanthan Gum) 3.Combine Wet Ingredients (Bananas, Eggs, butter) in a mixer 4.Slowly add Dry ingredients to wet ingredients until completely combined 5.Add nuts to mixture. 6.Grease bread pan(s) with a thin layer of butter 7.Fill bread pan(s) about 2/3 to ¾ of the way full

If using one pan, bake 55-60 minutes

If using 4 smaller pans, bake 25-30 minutes Muffins (yield 15): 27-30 min.
