Ingredients

Cake:

2 cups sugar

4 eggs

1 cup vegetable oil

2 cups flour

2 tsp. baking powder

2 tsp.baking soda

1 1/2 tbl.cinnamon

4 cups grated carrots

3/4 cup chopped pecans/walnuts

cream cheese frosting:

8 oz. cream cheese(softened)

1/2 cup butter

1 tsp. vanilla

1 lb. powered sugar

Preparation

Cake: Preheat oven to 350 degrees. Grease & flour 13x9x2" pan

Beat sugar & eggs until thick & pale yellow. Stir in oil.

Sift together flour, baking powder, baking soda & cinnamon.

Stir into egg mixture. Fold in carrots & nuts.

Pour batter into pan & bake in preheated oven, 35 to 40 min. Cool on rack & frost with cream cheese frosting.

    Frosting:

Beat cream cheese, butter, vanilla & powdered sugar until smooth.
