Ingredients

5 Pounds Russet Potatoes

7-10 Hard Boiled Eggs

1 Pound Bacon cooked and

Crumbled

1 Tbsp Reserved Bacon Fat

1 1/2 Cups Mayonaise

2 Tbsp Fresh Parsley

Chopped Fine

1 Cup Diced Celery

1/2 Cup Diced Onion

1 Tsp Celery Salt

Salt and Fresh Ground

Pepper to taste.

Preparation

Place whole unpeeled potatoes in pot of cold salted water. Bring to a boil. Cook until fork tender. Peel and dice potatoes. In large bowl add potatoes and toss with reserved fat. Incorporate the other ingrediants. Mix well adjust salt and pepper as needed.
