Ingredients

1 tbsp. vegetable oil

1/2 cup sugar

rind of 1/2 a lemon, finely chopped

juice of 1 lemon

3 bananas, mashed

2 eggs

1/3 cup low fat vanilla yogurt

1 3/4 cup whole wheat flour

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 tbsp. cinammon

1 cup walnuts, coarsely chopped

Preparation

Preheat oven to 325. Beat together oil, sugar and lemon rind. Add lemon juice, bananas, eggs and yogurt. In a separate container stir together all dry ingredients (except walnuts). Add dry ingredients to the banana mixture and stir until just combined. Do not overbeat. Gently fold in walnuts. Bake for 1 hour, or until tester inserted into center comes out clean.
