Head broccoli
Boiling water (salted or not)

Preparation
Divide broccoli into individual florets (little trees). Bring water to boil in large saucepan. Add enough broccoli to cover surface of water, and par-boil for two to three minutes (just until barely tender). Scoop broccoli out with slotted spoon, and immediately dump into ice water. When water resumes the boil, cook the next batch. Transfer cooked and cooled broccoli to another container (preferably a strainer so water can drain off), adding ice as necessary to keep water bath very cold. When ready to serve, heat some olive oil or butter in a saute pan. Add broccoli, and saute just until heated through.
