FILLING

4-8 oz. Packs Philidelphia Cream Cheese

1 cup sugar

3 eggs

3Tbs flour

11/4 tsp vanilla

1/3 cup heavy cream or 1/4 cup half & half

CRUST

1 1/2 packs honey graham crackers

20 vanilla wafers

2Tbs sugar

1 stick or 8tbs unsalted sweet cream butter, melted

Preparation

Preheat oven to 330 degrees. CRUST Crush graham crackers and nilla wafers together, and mix well with sugar. Stir in melted butter and press mixture into bottom and sides of a 10" springform pan. Note: pay particular attention to the sides, having adequate crumbs on the sides is the key to an uncracked cheescake. FILLING In a large bowl blend together cream cheese and sugar, scraping the bowl often. Next add all three eggs and blend until smooth. Mix in flour,cream and vanilla blend until completly mixed. Now blend on high speed for 30 seconds, scrape sides and bottom of bowl and blend once more for 30 seconds. Pour filling into prepared pan, and place in oven on a flat sheet for 50 minutes or untill center is almost set. But, no less than 50 min. Now run a knife around edge of pan to loosen from sides, do not unhinge springform. Allow to cool in warm place for 30 minutes then refrigerate for 4 hours.
