Ingredients

2 Tb. shallots, minced

8 oz. white wine

2 oz. lemon juice

1 Tb. heavy cream

1 1/2 sticks butter

Preparation

Reduce shallot, wine, and lemon juice to 2 Tbs. Add cream and reduce heat to low for 30 seconds. Off the heat, stir in chunks of butter until of correct consistency. Season with salt and pepper.
